Sweet Potato Beds

This was our first attempt at growing sweet potatoes in the greenhouse. Today was the day to harvest, and we couldn't wait to see how many sweet potatoes were lurking in the dirt!

We pulled up the vines and gave them to the chickens, and then got our hands dirty searching for sweet potatoes. We didn't use any tools because we didn't want to damage any of the tubers. We removed the top layer of straw, and then we started scavenging!

All in all, we got about 10 pounds of sweet potatoes. Now they will spend two weeks in a warm, dark, humid place (Mom's bathroom!) to cure. This helps the skin toughen and give the sweet potatoes better flavor. We are excited to give them a taste!
